Cambodia is renowned for its high-quality palm sugar, traditionally made from the sap of the sugar palm tree (Borassus flabellifer, known in Khmer as ត្នោត tnaot). Cherished by the Khmer people, palm sugar is widely used in both savory and sweet dishes.
The image below shows a countryside stall along National Road 5, where palm sugar pucks are sold to travelers and locals alike.
