The glass catfish (Kryptopterus bicirrhis, Khmer: ត្រីកែស trey kes or ត្រីកែសប្រាក់ trey kes prak) is among the most prized and costly freshwater fish in Cambodia. It is commonly deep-fried to a crisp and served with a flavorful dipping sauce, or generously topped with a chunky blend of chili, garlic, and fragrant herbs.
