Eggplant with pork is one of those quiet Cambodian dishes that rarely headline restaurant menus but regularly feed real families. It is a soft, savory stir-fry where minced pork, eggplant and mushrooms melt together in a light sauce that begs for jasmine rice. No fancy tricks, no mystical spices, just honest kitchen work and a cooperative wok.

This article is for home cooks who enjoy Asian flavors but prefer clear instructions over culinary drama. You will see what goes into Cambodian eggplant with pork and mushrooms, how to cook it step by step and how to adapt it to your own kitchen without triggering any imaginary ancestral disapproval.   • Eggplant (Asian long or globe, sliced or roughly chopped)
  • Minced pork
  • Mushrooms (oyster, straw or button, sliced)
  • Garlic, finely chopped
  • Shallots or onion, sliced
  • Fish sauce
  • Light soy sauce
  • A pinch of sugar
  • Ground black pepper
  • Neutral cooking oil
  • Water or light stock (for softening and a light sauce)
  • Sliced fresh chilies or chili paste, according to taste
  • Chopped spring onions and Thai basil leaves for garnish

Eggplant acts like a sponge for flavor, mushrooms add gentle earthiness and extra softness, and the minced pork brings richness and a bit of sweetness. Fish sauce and soy sauce provide the savory backbone, while garlic and shallots make the kitchen smell like you know exactly what you are doing. Spring onions and Thai basil finish everything with a fresh, aromatic lift.

Preparing the eggplant and mushrooms

Choosing and cutting the eggplant

Asian long eggplants are ideal because they cook fast and have tender skin. If you only find large globe eggplants, peel a few strips of skin and cut them into chunky bite-sized pieces. Aim for pieces roughly the length of a fat French fry so they soften evenly without turning to mush.

Some cooks lightly salt the eggplant for a few minutes to reduce any lingering bitterness and extra moisture. With most modern varieties you can skip this if impatience wins, but the texture is slightly better when you give the salt trick a chance.

Prepping the mushrooms

Use mushrooms that cook quickly and stay mild in flavor, such as oyster, straw or regular button mushrooms. Slice them into modest pieces so they soften in about the same time as the eggplant. They should blend in and support the eggplant and pork rather than trying to steal the show.

For a Cambodian-style stir-fry, both eggplant and mushrooms should be soft and almost silky. A simple trick is to start cooking the eggplant with a bit of oil and an immediate splash of water or light stock, then add the mushrooms shortly after so everything relaxes together.

How to cook Cambodian eggplant with pork and mushrooms

Step by step method

  1. Sauté the aromatics
    Heat a little neutral oil in a wok or wide pan over medium heat. Add chopped garlic and shallots and cook until fragrant and lightly golden.
  2. Brown the minced pork
    Increase the heat, add the minced pork and break it up with a spatula. Cook until it changes color and starts to release some fat.
  3. Season the base
    Add fish sauce, a splash of soy sauce and a pinch of sugar. Stir well so the pork is evenly seasoned. This is the backbone of your sauce.
  4. Add eggplant, mushrooms and liquid
    Stir in the eggplant pieces, tossing so they are coated with the pork and aromatics. Add the sliced mushrooms. Immediately pour in a generous splash of water or light stock; you want enough to lightly moisten the pan and help everything soften without becoming soup.
  5. Cover and soften
    Lower the heat to medium-low, cover and simmer, stirring now and then, until the eggplant is tender and slightly creamy inside and the mushrooms are fully cooked. If the pan dries out before the vegetables are soft, add a bit more water or stock.
  6. Finish with pepper, chili and herbs
    Sprinkle in ground black pepper and add sliced chilies or a little chili paste to taste (chili is optional). Turn off the heat, then stir in chopped spring onions and plenty of Thai basil leaves so they wilt in the residual warmth. Taste and adjust fish sauce, soy sauce and sugar until the sauce feels balanced and just salty enough to flatter a bowl of rice.

You should end up with a pan of gently sauced eggplant, mushrooms and pork dotted with green spring onions and glistening basil. If your rice has just finished cooking, you may briefly suspect that life is, in fact, well organized.

Serving ideas and simple variations

Cambodian eggplant with pork, mushrooms and Thai basil is designed for steamed jasmine rice. Spoon the stir-fry on top, let the light sauce soak into the grains and you have a full meal with very little ceremony. The spring onions and basil make the plate look more deliberate, as if you had planned everything hours in advance.

To keep things lighter, use lean minced pork and watch the oil. For a richer feel, a modest amount of pork belly mixed into the mince will do the job. Ground chicken can stand in for pork, though it likes a touch more oil and a confident hand with the fish sauce. For a nearly vegetarian version, reduce the pork and increase both eggplant and mushrooms, keeping the spring onions and Thai basil to carry much of the aroma.

Leftovers keep well in the fridge for a couple of days and reheat nicely with a small splash of water or stock. Add a few fresh Thai basil leaves on top after reheating if you have them, and the dish springs back to life almost as if it had just left the wok.
