Kantheay chha kaeng (Khmer: កន្ធាយឆាកែង) is a rustic Cambodian stir-fry of soft turtle cooked with lemongrass, young herbs, and plenty of chili bite. The meat is chewy yet deeply savory, soaking up the fragrant, peppery sauce.
