The pale bamboo shoots, red chilies, bean sprouts, and dark green African cabbage make this Cambodian pickle a feast of contrasting textures. Known as ជ្រក់ទំពាំងមមាញ chruk tumpeang momeanh, the dish combines the crispness of bamboo shoots with the distinctive leafy character of មមាញ. Simple, sour, spicy, and deeply familiar, it is a fine example of the everyday ingenuity of Khmer cuisine.
