These short, slippery rice noodles known as “rat noodles” are called លត (lot) in Khmer. Popular across Cambodia, they’re typically stir-fried with aromatic spices for breakfast. The curious name “rat noodles” comes from their Chinese name 老鼠粉 (lǎoshǔfěn), referring to the noodles’ thin, tail-like shape.
