Today’s rambutan plate in Phnom Penh looks like it’s smiling back, all bright red spines and translucent flesh ready to taste. Known in Khmer as “saomao (សៅម៉ៅ),” this lychee-like fruit is one of Cambodia’s most beloved rainy-season treats, juicy, fragrant, and impossible to eat just one.
