Kantheay chha kaeng (Khmer: កន្ធាយឆាកែង) is a rustic Cambodian stir-fry of soft turtle cooked with lemongrass, young herbs, and plenty of chili bite. The meat is chewy yet deeply savory, soaking up the fragrant, peppery sauce. It is the kind of countryside drinking dish that arrives sizzling, to be shared with friends over cold beer in the evening.
