A humble bowl of straw mushroom (Khmer: ផ្សិតចំបើង phset châm-baeng) sautéed with pork brings the flavors of everyday Cambodian home cooking to the table, light yet deeply savory. The tender minced pork, springy straw mushrooms, garlic, and scallions mingle in a delicate broth that begs to be spooned over warm rice. In Cambodia, these straw mushrooms are a beloved ingredient, prized for their texture and gentle sweetness whenever meat is scarce or simply as a favorite seasonal treat.
