Ambok (Khmer: អំបុក) is a beloved Cambodian delicacy made from young green rice that’s roasted, pounded, and flattened into tender flakes. It can be prepared in a sweet or in a savory snack.​ It plays a central role during the Bon Om Touk festival, symbolizing gratitude for the harvest and blessings from the moon.​ More than a festival treat, Ambok reflects Cambodia’s deep agricultural roots and the communal joy of sharing food under the full moon.
